Savory Oatmeal

Why should oatmeal always be on the sweet side? It’s a grain like rice and farro. Mix it up! Add your favorite savory ingredients! Be crazy add an egg! This is my favorite way to eat steel cut oats, it’s great for any meal!

INGREDIENTS:

1/2 to 1 C. Cooked Oats, Steel Cut or Quick Oats

1 Tsp. Olive Oil

2-3 Mushrooms, sliced thinly

1 Green Onion, sliced thinly

1/4 Tsp. Thyme

Salt and Pepper to taste

1 Tbsp. Half and Half, Milk or Water

2 oz. Cheese of your choice, cheddar is my favorite

Handful Arugula or Spinach

INSTRUCTIONS:

Heat Olive in a saute pan. Add Mushrooms, onions, thyme salt and pepper. Don’t crowd the mushrooms. Cook until brown and toasty.

Prepare your oatmeal according to package directions or you can heat left over oatmeal in microwave.

Add mushroom mixture, half and half, cheese to oatmeal. Stir until cheese is melted. Top with your favorite greens. If you need extra spice add some Texas Pete’s or Siracha. Eat up!
