In my book a frittata is perfect for all meals. It has eggs and is a great way to get rid of all those tiny bits of leftovers . ADDED Bonus it’s actually good cold. A few have asked me for the recipe so here you go. Think of it as an omelette without the fold. You won’t believe how easy it is.
Ingredients:
Leftover broccoli rabe, cooked greens, cooked sausage (turkey, pork, vegen) fresh veggies, sauteed mushrooms, small potatoes (microwaved or boiled) and cheese of your choice (opt.). Be creative there are so many choices.
1-2 tbsp. Olive oil
2 -4 Eggs (depending on how many you’re feeding)
Cheese (optional)
Salt and pepper
How to:
Turn on the broiler to the hi setting. Heat oil in in an oven proof sautee pan. Crack your eggs in a bowl. Season with salt and pepper and whisk.
Add leftovers. Pour mixture in the pan. Make sure your eggs cover the bottom of the pan and fillings. Cook eggs so that the bottom is set, but are still runny on top. Add cheese, if using .
Pop the pan under the broiler and wait 1-2 minutes. When it firms up take it out of the oven. Serve. It will be a little crispy on top. See! It’s just that easy.
