CANAL HOUSE LENTILS

I have to eat breakfast, it’s a must especially when I’m training for races. Plain greek yogurt, berries and raw nuts equals the usual breakfast bowl at my desk the majority of the week. Most of the time it’s fine until I need a change.

That’s when I turn to something more savory,Canal House Lentils and hardboiled eggs. I found the lentil recipe in a healthy food edition of “Bon Appetit.” It’s warm and filling.Paired with a perfectly cooked hardboiled egg,fresh greens and a splash of hot sauce or Siracha it cures my breakfast blues and it’s great during race season.I  generally have all the ingredients in my pantry so it’s easy to cook The only change I make is using a scallion for a leek and whatever lentils I have on hand.

Canal House Lentils

  • 2 tablespoons olive oil
  • 1 medium leek (use any variety of onion you want)
  • 1 clove garlic,thinly sliced or minced
  • 1 tablespoon tomato paste
  • 1 cup green lentils, rinsed
  • 2 1/2 cups water
  • 2 tablespoons soy sauce
  • Kosher salt and ground pepper
  • thinly sliced green onions

Instructions:

Heat oil in a medium sauce pan over medium heat. Add, leek (or other onion substitute), garlic and tomato paste. Cook until paste darkens, roughly minutes. Add Lentils and water. Bring to a boil, cover and cook for about 45-55 minutes. Remove pan from heat and let sit, covered 10 minutes. Add soy sauce, salt and pepper.

The perfect hardboiled egg:
Place eggs in a sauce pan, cover with cold water.
Bring eggs to a boil, turn off heat, cover for 7 minutes. Then, submerge in an ice bath. I think this makes the best egg with a tender white and a soft yolk.

Build your breakfast.
In a bowl or a container add lentils, 1 egg peeled and chopped, you want the yolk to mix with the lentils. Next add your favorite chopped greens. A note about greens, I love arugula because it bitterness stands up to the strong flavors of the lentils. But baby spinach or fresh greens work too. If I have leftover broccoli rabe or pickled onions I add that. I like lots conflicting flavors. Swirl Siracha or sprinkle your favorite hot sauce over everything. There it is! The perfect savory breakfast!

  1. Yummy! I might do a poached egg rather than a hard boiled. I have a poaching-nuke contraption and I think a slightly runny egg is good with the greens!

    1. Yes. A poached egg would work great! I used hardboiled eggs because they’re easier to pack for work and I don’t like cold poached eggs for some reason.

      1. I don’t like cold poached eggs either. I will try this later in the week for breakfast !
